thanks a lot for the great work.

I want to change the other end of gradient tool in simple menu view, as far as I know there is no way to change the background color in simple mode.

Gradient fades between the foreground colour and transparent at the moment.

The Simple menu is intended for kids so most of the options are not available.
You might want to try the Standard menu mode and detach the palette (button on the top right) if you want it visible all the time.
